Our Chef

Chef Yuan has over 30 years of experience in Huaiyang cuisine. He has worked as a head chef in a five star hotel in China, and had participated in the meal preparation of many international business conferences.

His favorite dishes include Zhenjiang ribs, beer duck, and Mapo tofu.

 La cuisine de Huaiyang est une tradition culinaire qui s’est développée en Chine très tôt (avant l’ère chrétienne) autour des villes des Yangzhou, Huaian et Zhenjiang. La cuisine du Huaiyang est considérée étant l’une des « Quatre grandes cuisines de Chine », avec la cuisine de Shandong, la cuisine de Canton et la cuisine du Sichuan. 
La cuisine de Huaiyang se caractérise par l’importante primordiale accordée aux ingrédients: toujours locaux, toujours de saison, toujours d’une fraîcheur extrême, et toujours de qualité.


JCer Restaurant was founded with the objectif of bringing the decandent Huaiyang cuisine to Montreal. With our unique touche on Chinese food, you are guaranteed to live an unprecedented culinary experience.

The Huaiyang cuisine roots back to the pre-Christian era and was developed around the cities of Yangzhou, Huaian and Zhenjiang. Nowadays, the Huaiyang cuisine finds its place amongst one of the “Four Great Traditions” that dominate the culinary heritage of China, along with Cantonese cuisine, Shandong cuisine and Sichuan cuisine. 
It is characterized by the importance allocated to ingredients. They must be fresh, local, seasonal, and of high quality. The result of cooking with such ingredients is a light and meticulous dish, in contrast to the more “brash” eating styles of northern China.​​
